[Recipe] Brussel Sprout Fennel Salad

In an attempt to get myself back to a healthy place with eating, I’ve been packing my lunch a lot more lately. It’s insane how much eating out affects us – and not only our bodies, but our wallet! I don’t know how people DON’T pack lunch on a regular basis!

Anyway, recently I purchased some fennel which I LOVE. I’ve learned from my latest Tone It Up superfood nutrition plan that it’s not only delicious, but it’s is rich in fiber, vitamin C, potassium and essential minerals! I typically sautee or roast it but, as I started chopping it, I picked up and ate a piece. It’s so pungent and tasty as-is, so I decided to put it into a salad…

katekatebear brussel sprout salad.jpg-large I chopped up some brussel sprouts (also one I typically cook, but are delicious raw) and started thinking…hmm…this is looking like a super superfood mix! I added some tasty & hot poblano peppers, then some green onions and grilled shrimp.

I coated with a light miso paste/water dressing to give it a little bit of an Asian-style taste. So good! Miso paste is made from fermented soy beans and it adds a little saltiness to dishes (which I CRAVE). Miso actually contains valuable living enzymes that are beneficial to you to restore good bacteria in your system, aid in digestion. It also has essential amino acids and B vitamins!

VOILA! Tasty new salad recipe – I had to share! :)

Kate’s Brussel Sprout Fennel Salad
Ingredients:

  • 1/2 C brussel sprouts (thinly sliced)
  • 1/2 fennel bulb (chopped)
  • 1/2 pepper (chopped) – I used a poblano pepper for a little kick!
  • 1 green onion (chopped)
  • 1/2 C cooked shrimp (chopped)
  • 1 t miso paste
  • 1/2 C water
  • 1/2 t cayenne pepper for taste
  • S&P

Directions:

  1. Wash and de-stem/seed all of the vegetables. Wash and remove the tails from your shrimp.
  2. Mix miso paste and water together thoroughly to make a light Asian-style dressing.
  3. Mix ingredients & toss with dressing. Add salt and pepper for taste
  4. Enjoy!

[Wedding] The Place

Our May wedding is coming up  so soon...like in 40 DAYS!!

You know we’re getting married in Baltimore…but now I’m excited to tell you where: the Four Seasons! Both our ceremony and our reception will be on the FS property here in Baltimore’s Inner Harbor!

The ceremony:
As I mentioned, LOCATION was one of the most important things to me in planning our wedding. I’ve always wanted to get married outside…something about being in the sun in the springtime. It’s my favorite. :)
There are a million places outside you could probably get married. We’re incredibly lucky to be located right by the water here in Baltimore. That at least narrowed the choices down a bit…ending with our winner, the Four Seasons! It has a beautiful view of the Inner Harbor, Federal Hill and so many of the places we love to frequent!

The reception:
Third and final on my top three list was, of course, FOOD.

We’re hosting the reception at PABU, an amazing Asian-fusion restaurant located just inside the Four Seasons!

If you follow me on Twitter, you’ve heard me RAVE about PABU. Honestly, their food is so delicious. Chef Jonah is one of the most incredible in the city. He, and his talented staff of skilled chefs, mixologists and sake experts, rock our world every time we visit!

We love them, of course, but it’s not just us. PABU was recently named to as one of the top restaurants in the city by the Baltimore Sun AND named to Baltimore magazine’s top 50 restaurants!

[Giveaway] Onzie Apparel

Recently, I was asked to try out a fun fitness brand called Onzie and being the workout freak who-never-has-enough-workout-clothes-because-they-are-always-in-the-laundry I was, of course, excited for the opportunity!

I had never heard of Onzie (pronounced own-zee), but I’m always open to trying new things. As if they knew I was coming, the first thing I saw from them was superhero related. Fitness gear + nerd stuff? I’m in.
….also they have downloadable superhero masks SO FUN.

onzie be your own superhero

Onzie was developed by a 20 year Bikram Yoga vet. It was originally targeted just for yoga, but it seems to be functional and flattering for all types of different active uses! Their apparel is designed with Free-Flow Fabric Technology, which claims to dry quickly for ultimate ventilation while you work out, all while staying comfortable and supported. The brand is also proud to be American-made, everything is done in good ol’ LA!

They have a smaller collection with a range of fun and colorful pieces. They have your typical solid pieces, but they take it to another level with their prints…everything from floral to galaxy, peacock feathers to skulls.

I’m often pretty plain Jane with my workout gear, so I decided to do the whole “when in Rome” thing and try out a print. Skulls seemed like as good a bet as any! I tried out their capri pants (in the skull print) as well as their braid tank top (ok with that, I tried boring black).

I like the fit of both pieces. The capris have a wide waist band, which is a huge plus for me. The top has a built in bra but, if you’re like me…those are never REALLY enough. I wore a sports bra with the top and it was great! I went through a sweaty 15 minute Nike Training Club workout with Jeanette Jenkins (seriously…those get me every time!) and a killer Tone It Up bosu/med ball workout. The clothes held up really well! The shirt rode up a little around my waist, but that honestly could be because my thighs are…well…there. haha

Definitely a great workout! As they claimed, the gear was quick to dry! It was also light as I worked out in my stuffy little room! I took my clunky sports bra off to see what the braid top looked like without it too and I loved it! Maybe something I could wear in the summer just lounging!
