[Recipe] Chipotle Turkey Chili

One of the best dishes my mom made at home was chili. YUM! She was always nice enough to make a separate pot for me with no beans (bless that sweet woman who accommodated us three kids). Anyway, needless to say, I’ve been a non-bean chili lover for a long time.

Anyway, since leaving home, living on ramen noodles & saltines for four years, then eventually finding my way around the kitchen as an adult, I’ve perfected my own recipe and thought I’d share the love!

Kate’s Chipotle Turkey Chili

  • 3 lbs ground turkey
  • 1-2 onions (chopped)
  • 1 green pepper (chopped)
  • 4-5 garlic cloves (chopped)
  • 2 (16oz) cans diced tomatoes
  • 2T chili powder
  • 2T chipotle chili powder
  • 1t red pepper flakes
  • S/P

  1.  In a large pan OR rimmed electric skillet on medium heat, cook turkey, onions, pepper and garlic. Stir frequently.

  2. Add tomatoes (with liquid), chili powders, pepper and S/P.
  3. Heat to a boil.

  4. Reduce heat to low and cover.
  5. Simmer for approx 1 hour (may have to add water if it gets too dry)
  6. Enjoy!
Serve topped with a dollop of non-fat sour cream and 1T cheddar cheese if you like! :)

Toneitupsgiving ♥

So, this will be my first “real” blog post attempt…so please bear with me. I tend to ramble…and post a TON of photos. It’s kinda my thing. Enjoy. :)

Anyway, just in case you follow me and don’t know who the Tone It Up girls are yet (and if that’s the case, well…you must not be paying attention), they are two of the most important women in my life. They’ve helped me on a weight loss & self-bettering (we’re just going to pretend that’s a word) journey that continues every day.

In the spirit of Thanksgiving, I want to thank them. Thank you, Katrina & Karena. As I’ve said many times, you’ve been such a big part of my life and I wouldn’t be where I am without you. I love you both and couldn’t be happier you’re in my life!

Part of being involved with TIU is that you’re kind of automatically on the Tone It Up Team. Each member of the team regularly checks in with healthy meal ideas, workout updates, and motivation (pretty sweet, right?). You can connect with these women online and, in my case, locally!

I am so incredibly lucky to have a big group of fellow Baltimore Tone It Up Team members! And we get together pretty much every week for workouts. I want to take a second to thank them as well. Love you girls so much! Not only do you motivate me every single day to get to the gym & work it, but you’ve become great friends and, well, you’re awesome. :)

So now for the main purpose of this post…TONEITUPSGIVING! What is Toneitupsgiving, you ask? Simple…

Tone It Up + Thanksgiving = Toneitupsgiving!

Seriously, it’s only like half a step more complicated than Dave Matthew’s Band…you should have figured that one out on your own

As a group of ridiculously fun gals, the Baltimore TIU crew decided to get together for a (mostly) healthy Thanksgiving celebration! We each brought dishes including Zucchini pizzas, Honey roasted carrots, Apple pie pops, Turkey (or course), and more!

After a little reheating and warming, it was time to EAT!

And there may or may not have been some wine involved…

Seriously, don’t you just want to dive into this? SO delicious!

And don’t forget dessert!

But seriously…we really loved those pie pops!

What’s that kid’s song? “Clean Up! Clean Up! Everybody! Everywhere!”?

And after some fun chatting, discussions of odd squatting practices (don’t ask…), and a bit more wine, it was photo shoot time!

It’s like we’re models…

We’re cute, aren’t we ;)

And then we got silly…
That wine may have had something to do with it….

So, in summary, it was an amazing night! And I hope it becomes a tradition with us for years to come. :)
